The stability of glutamate pyruvate transaminase (GPT) in extracts of Lolium temulentum leaves was investigated. The reduction in total GPT enzyme activity in vitro during incubation in crude extract and with added papain was accounted for by preferential loss of the chloroplastic isoenzyme. Glutamate oxaloacetate transaminase (GOT), although an enzyme of related function and isoenzymic distribution, was much more stable than GPT and the plastid isoform was also resistant to proteolytic treatment.
