Longitudinal Metabolic Profiling during Growth and Storage of Apples from Different Production Systems Studied by 1H HR-MAS NMR

Different plant protection strategies and storage conditions in agricultural apple production may have a considerable impact on the quality of the final fruit products. This in turn may be reflected in the metabolic profile of the apples. Direct application of 1H High Resolution Magic Angle Spinning (HR-MAS) NMR spectroscopy to apple pulp is a powerful tool for obtaining a mostly unaffected metabolic profile [1].
In the current study we have investigated Golden Delicious apples grown under three different production systems, i.e. organic (BIO), low-input (LI) and integrated (IP) production. Fruit samples were harvested at different times during fruit development on the tree. In addition, apples picked at optimal harvest time were studied before and after controlled atmosphere (CA) storage.
1H HR-MAS NMR based metabolomic analysis of the apple pulp samples revealed metabolites distinguishing BIO apples from LI and IP production. Discrimination was best at optimal harvest time and possible but diminished after storage. The longitudinal metabolic changes taking place during growth and storage are discussed in detail.
